Bayberry

Bayberries are expected from mid to late December; orders aren't open yet. Please leave your email and we'll let you know as soon as they're ready.

Our bayberries are naturally grown without chemical pesticides or synthetic fertilisers, rooted in the red volcanic soil of Silvan, Victoria. That soil, plus plenty of Southern Hemisphere sunshine, gives them a flavour of their own.

What we grow

Our bayberries fall into three main types, ripening from early to late over a season of about a month:

  • Heitan bayberries: deep purple-black when fully ripe, about 2–3 cm across, small stone, sweet with a gentle tartness and very juicy – our main variety
  • Xiaotian (small sweet) bayberries: petite, mainly sweet with a light tartness
  • Dongkui bayberries: the largest, with firm flesh and high sweetness

Bayberries are all about freshness – picked only when fully ripe on the tree, bursting with juice.

Farm pickup: if you collect from the farm, you can taste before you pay, and you don't have to buy if you're not happy with them.

Storage: bayberries have no skin to protect them and are very delicate. Refrigerate on arrival and enjoy within 1–2 days.

Why

Growing the taste you remember

Supermarket fruit keeps getting bigger and prettier, yet somehow it has lost its fragrance and depth. To boost yields and survive long transport, synthetic fertilisers and sprays have become the norm.

What we want to grow is the taste you remember from childhood: fruit picked only once it's ripe on the branch, there when the season comes and gone until next year.

The trade-off

A little slower, a little harder

Farming without chemical pesticides or synthetic fertilisers means:

  • Lower yields, and fruit of uneven sizes
  • Weeding by hand instead of with herbicides
  • Much more care to keep pests and disease away
  • Higher costs – but food you can trust
The soil

How we look after the soil

Good fruit starts with good soil. We use only natural fertilisers:

  • Wood ash: from the farm's own fallen branches and leaves, for potassium
  • Sheep manure: from a nearby grazing property, fully composted before use
  • Compost: fruit peels, vegetable scraps and chicken manure, slowly composted on the farm
  • Seaweed fertiliser: for trace elements
