That soil, plus plenty of Southern Hemisphere sunshine, gives them a flavour of their own.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWhat we grow\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eOur bayberries fall into three main types, ripening from early to late over a season of about a month:\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003e\u003cstrong\u003eHeitan bayberries:\u003c\/strong\u003e deep purple-black when fully ripe, about 2–3 cm across, small stone, sweet with a gentle tartness and very juicy – our main variety\u003c\/li\u003e\n\u003cli\u003e\u003cstrong\u003eXiaotian (small sweet) bayberries:\u003c\/strong\u003e petite, mainly sweet with a light tartness\u003c\/li\u003e\n\u003cli\u003e\u003cstrong\u003eDongkui bayberries:\u003c\/strong\u003e the largest, with firm flesh and high sweetness\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003eBayberries are all about freshness – picked only when fully ripe on the tree, bursting with juice.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eFarm pickup:\u003c\/strong\u003e if you collect from the farm, you can taste before you pay, and you don't have to buy if you're not happy with them.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eStorage:\u003c\/strong\u003e bayberries have no skin to protect them and are very delicate.
